Claire's EASY Sour Cream Biscuits
Sally Brooks-Schulke
(Fourth of July 2004 at Brooks-Schulkes)

1 cup biscuit mix
1/2 cup sour cream
1/4 cup melted margarine

Combine all ingredients, drop by rounded tablespoon into greased muffin pan. Makes 12 mini or 6 large muffins, recipe doubles easily. Bake at 425 for 15-18 minutes (I baked them at 400, along with my apricot cobbler and they seemed to brown nicely---they are so rich you don't need to butter them when eating.)
