Chicken - Broccoli Divan

1 lb. fresh broccoli cut into spears or 1 - 10 oz pkg. of frozen broccoli spears, cooked and drained (I used frozen broccoli crowns by C and W)

1 1/2 C. cubed chicken or turkey (I used Foster Farms already grilled chicken strips)

1 can Campbell's condensed cream of chicken soup

1/3 C. milk

1/2 C. shredded Cheddar cheese

2 T. fine dry bread crumbs(I used Kellogg's corn flake crumbs and more than 2 T)

1 T. margarine or butter, melted

1. Preheat oven to 450 degrees
2. In 10 x 6 in. baking dish, arrange broccoli; top with chicken.
3. In small bowl, combine soup and milk; pour over chicken.
4. Sprinkle generously with cheese.
5. In cup, combine crumbs and butter and sprinkle over cheese.
6. Bake 15 minutes or until hot and bubbling.
7. Make 4 servings.

NOTE: I tripled the recipe and cooked it at 350 for about an hour. I always like more cheese, cornflake crumbs, and butter than stated!


Tzika's Pasta

1 lb. fettucini
8 oz.sliced ham, diced
8 oz. kasseri cheese, grated coarsely
1/4 cup grated parmesan (Kraft OK)
1 large can tomatos (28? oz)
2/3 pint heavy cream
1 box frozen artichoke hearts (optional)
chicken bouillon cube or powder
1 T. sugar
4 T. extra virgin olive oil

Make tomato sauce, also excellent as marinara sauce for pasta in general:
Break up tomatoes with hands in saucepan. Add sugar, bouillon, pepper and oil. Bring to boil, simmer about 20 minutes till thickened. Put aside.
Boil pasta in salted water till al dente. Drain, rinse slightly and mix with half of kasseri and parmesan, in 13x9 inch greased baking pan or casserole.
Boil artichokes in salted water, if using. Drain and add to pasta mixture.
Mix diced ham into pasta.
Pour 2/3 container of cream evenly over pasta.
Pour as much pasta sauce as seems appropriate over pasta (there may be some sauce left over)
Mix and sprinkle evenly with remaining cheeses.
Bake @ 375 for 20 to 25 minutes.
